Graham is another fellow Kiwi who Nick was told was the finest pastry man and pie maker in New Zealand. Baking since he was not long out of nappies, Graham had mastered the art of pie-making many years back, leading to repeat "Best in Show" awards at the highly coveted NZ National Supreme Pie Championships (along with a plethora of category awards), plus multiple winner of the New Zealand's "Best Bakery Award". These awards cemented Heaven's Bakery as an institution in the Hawkes Bay area of New Zealand. Nick timed his call to perfection as Graham had just handed the reins over to his son Jason and – having "got a bit sick of mowing the lawns" - jumped at the chance to fly over to the United Kingdom to help develop Brother Tom's special pastry.

Note: Graham's photo may make him look like a Mafia Don who'd have you rubbed out without a moment's hesitation, but the only reason he's looking pretty unimpressed is because we'd asked him to step out of the bakery.
