Jimmy is the Brit in the Brother Tom's team. Trained by his father, Jimmy was boning out chickens in Thame, Oxfordshire while he was still knee high to the proverbial grasshopper. After a period of time working for a Big Corporate in the meat world, Jimmy returned to the award winning family butchery - a preferred supplier to the likes of Le Manoir aux Quat' Saisons and a winner of the Britain's "Best Butcher's Shop" award from the Meat Trades Journal. Jimmy slipped on to the radar thanks to a mate of Nick’s who lived in Thame. He’d been thinking about trying to make the ultimate handheld pie and after just a couple of chats with Nick decided to join the team.
